Pork Kway Teow
- 14 oz fresh wide rice noodles
- 1 1/4 lb ground pork
- 1 None medium Spanish onion, thinly sliced
- 1 None medium red pepper, thinly sliced
- 1 (4 inch) stalk fresh lemongrass, finely chopped
- 2 tbsp light soy sauce
- 1/4 cup lemon juice
- 1 tbsp grated palm sugar
- 1 None fresh long red chili, finely chopped
- 1/2 bunch coarsely chopped fresh cilantro
- Place rice noodles in a large heatproof bowl. Cover with boiling water and separate strands with a fork. Drain.
- Oil a wok and place over high heat. Brown ground pork then remove from wok.
- Add onion, red pepper and lemongrass to wok. Saute until onion softens. Return ground pork to wok along with noodles, soy sauce, lemon juice and palm sugar. Stir-fry until hot. Stir in chili and cilantro.
