Beef With Soy Sauce And Vegetables
- 8 oz long grain rice
- 1 1/2 lb sirloin steak
- 4 tbsp sunflower oil
- 3 None carrots, cut into matchsticks
- 2 None onions, chopped
- 3 cups beef or vegetable stock
- 2 tsp cornstarch
- 4-5 tbsp soy sauce
- 1 cup arugula
- Cook the rice according to the package instructions.
- Season the beef and cut it into strips. Heat 2 tbsp of the oil in a frying pan and cook the beef for 4 mins, stirring. Transfer to a plate. Add the carrots and onions to the pan and saute for 5 mins.
- In a separate pan, mix 2 tbsp of the stock with the cornstarch. Add the rest of the stock and the soy sauce and bring to a low boil. Add the carrots and onions and cook gently for 4-5 minutes until tender. Add the beef and rice and heat through. Season to taste, adding more soy sauce if needed. Toss with the arugula and serve immediately.
