Mini Moroccan Lamb Pizza
- 1 tbsp vegetable or olive oil
- 1/2 small onion, finely chopped
- 11 oz ground lamb
- 1 clove garlic, crushed
- 1 small zucchini, finely chopped
- 1 tbsp Moroccan spice mix
- 2 tbsp tomato paste
- 2 None ciabatta rolls, halved
- 1/3 cup store-bought roasted red pepper hummus
- 2 tbsp slivered almonds
- 1/4 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 2 tbsp finely chopped fresh mint
- Preheat the oven to 425u0b0F. Grease a baking pan.
- Heat oil in a large skillet on medium heat. Add onion; cook, stirring, for 3 mins, or until soft. Add ground lamb; cook, stirring with a wooden spoon to break up lumps, for 5 mins, or until browned.
- Add garlic, zucchini and spice mix; cook, stirring, for 1 min, or until fragrant. Add tomato paste and 1/3 cup water. Bring to a boil. Reduce heat to low. Simmer, uncovered, for 2-3 mins, or until thickened.
- Place bread, cut-side up, on prepared pan. Spread with hummus. Top with lamb mixture, then sprinkle with almonds and feta.
- Bake for 10-12 mins, or until bottoms are crisp. Combine yogurt, mint and 1 tbsp cold water in a small bowl. Serve pizzas drizzled with yogurt mixture.
