Coffee And Walnut Butter Cake
- 1 cup butter, at room temperature
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 None eggs
- 1 2/3 cup self-rising flour, sifted
- 1/3 cup cornstarch, sifted
- 1/3 cup milk
- 1/2 cup ground walnuts
- None None Coffee Cream Filling
- 7 tbsp unsalted butter, at room temperature
- 1 1/2 cups powdered sugar, sifted
- 2 tbsp strong black coffee, at room temperature
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease and line base of a deep 8 inch round cake pan.
- Cream butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Add flour, cornstarch and milk and mix until combined. Beat for another 3 mins, until smooth. Fold in ground walnuts. Transfer to prepared pan. Bake for 50 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
- To make the filling, cream butter and sugar until pale and creamy. Add coffee and beat for 2 mins, until fluffy. Cut cake in 1/2, spread filling over base then cover with top cake. Dust with powdered sugar.
