Choc-Mallow Cake
- 8 tbsp (1 stick) butter
- 1 tsp vanilla extract
- 1/2 cup granulated sugar
- 1 None egg
- 2 tbsp light corn syrup
- 2 1/2 cups self-rising flour
- 1 1/2 cups milk
- 2 tbsp unsweetened cocoa powder
- 4 oz white marshmallows
- None None FOR THE CHOCOLATE DRIZZLE
- 4 oz semi-sweet chocolate, chopped
- 2 tbsp butter
- Preheat the oven to 350u0b0F. Lightly grease a deep 8-inch springform pan.
- Beat butter, vanilla extract, sugar, egg and syrup in large bowl with electric mixer until light and fluffy. Alternately stir in sifted flour with 1 1/4 cups of the milk.
- Place half the mixture into separate bowl, stir in blended sifted cocoa and remaining 1/4 cup milk. Drop alternate spoonfuls of white and dark batters into prepared pan. Run knife through the mixture to give marbled effect.
- Bake for about 45 mins. Remove cake from oven. Place a layer of marshmallows evenly on top of cake. Bake for about a further 5 mins or until marshmallows are beginning to melt. Cool in pan 5 mins. Remove side of pan. Cool completely on a wire rack.
- Drizzle with combined melted chocolate and butter.
