Beef And Vegetable Bolognese Casserole

  1. Preheat oven to 325u0b0F. For bolognese sauce, heat oil in a pan and saute onions, garlic and ground beef. Add cayenne and season to taste. Add canned tomatoes and simmer. Add fresh tomatoes and chopped herbs.
  2. Meanwhile, cook carrots and zucchini in boiling salted water for 3-5 mins. Mix with bolognese sauce and transfer to a baking dish. Mix feta and yogurt until creamy then pour over top and bake for 20 mins. Serve garnished with thyme and rye bread on the side.
