Salmon With Miso Soba Noodles
- 1 tbsp oil
- 4 None salmon fillets (about 6.5 oz each)
- 4 servings instant miso soup
- 9 oz soba noodles
- 4 cups baby spinach
- 1/3 cup mayonnaise
- 1 tsp wasabi paste
- None None Flaked sea salt, to serve
- Heat oil in a frying pan on medium. Season salmon skin and cook, skin side down, for 4 minutes. Turn and cook for 3-4 minutes or until cooked to desired doneness. Transfer to a plate. Keep warm.
- Meanwhile, bring 6 cups water to boil in a saucepan. Add miso, stirring until smooth. Add soba noodles. Boil 3-4 minutes, until tender. Remove from heat and stir in spinach.
- To make wasabi mayonnaise, combine mayonnaise and wasabi paste in a small bowl. Set aside.
- Ladle noodles and broth into serving bowls. Top with salmon. Accompany with wasabi mayonnaise and sea salt.
