Easy Christmas Cake

  1. Preheat the oven to 325u0b0F. Lightly grease and flour a deep 9-inch round cake pan.
  2. Place dried fruit, 1/2 cup water and oil in a large saucepan on high heat. Bring to a boil. Reduce heat to low; simmer, uncovered, 5 mins. Cool.
  3. Beat sherry and egg into fruit mixture. Add cake mix and slivered almonds; mix well.
  4. Pour into prepared pan, smoothing top. Top with blanched almonds and cherries in a pattern.
  5. Bake 1 1/2 hours, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Store in an airtight container.
