Easy Christmas Cake
- 1 1/2 lbs mixed dried fruit (golden raisins, raisins, figs, currants)
- 1/3 cup vegetable oil
- 1/2 cup sherry
- 1 None egg, lightly beaten
- 1 pkg (16 oz) carrot cake mix
- 1 cup slivered almonds
- 1/2 cup whole blanched almonds
- 4 oz glace cherries
- Preheat the oven to 325u0b0F. Lightly grease and flour a deep 9-inch round cake pan.
- Place dried fruit, 1/2 cup water and oil in a large saucepan on high heat. Bring to a boil. Reduce heat to low; simmer, uncovered, 5 mins. Cool.
- Beat sherry and egg into fruit mixture. Add cake mix and slivered almonds; mix well.
- Pour into prepared pan, smoothing top. Top with blanched almonds and cherries in a pattern.
- Bake 1 1/2 hours, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Store in an airtight container.
