Easy Minestrone
- 2 Tbsp. olive oil
- 1 clove garlic, minced
- 2 ribs celery, sliced
- 2 carrots, diced
- 1 large onion, chopped
- 2 cans chicken broth
- 1 can tomatoes, undrained
- 1 1/2 c. water
- 1 tsp. oregano
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can white beans, drained
- 1/2 c. small macaroni
- 2 c. fresh spinach
- grated Parmesan
- In Dutch oven, over medium heat, heat oil.
- Add garlic, celery, carrots and onion; cook 10 minutes, stirring often.
- Stir in broth, tomatoes and their liquids, water, oregano, salt and pepper.
- Bring to a boil, breaking up tomatoes with spoon.
- Reduce heat to low; cover and simmer for 20 minutes.
- Stir in beans and macaroni.
- Bring to a boil.
- Cover and simmer for 10 minutes longer.
- Stir in spinach.
- Cover and simmer for 5 minutes longer. Serve sprinkled with cheese.
