Easy Minestrone

  1. In Dutch oven, over medium heat, heat oil.
  2. Add garlic, celery, carrots and onion; cook 10 minutes, stirring often.
  3. Stir in broth, tomatoes and their liquids, water, oregano, salt and pepper.
  4. Bring to a boil, breaking up tomatoes with spoon.
  5. Reduce heat to low; cover and simmer for 20 minutes.
  6. Stir in beans and macaroni.
  7. Bring to a boil.
  8. Cover and simmer for 10 minutes longer.
  9. Stir in spinach.
  10. Cover and simmer for 5 minutes longer. Serve sprinkled with cheese.
