Marbled Loaf Cake
- 12 tbsp butter, at room temperature
- 1 1/4 cups granulated sugar
- 1 tsp vanilla extract
- 2 None large eggs, at room temperature
- 1/2 cup self-rising flour, sifted
- 1/2 cup milk, plus 1 tbsp
- 2-3 drops pink food coloring
- 2 tbsp sliced almonds, toasted
- None None Chocolate glaze
- 2.5 oz dark chocolate, chopped
- 3 1/2 tbsp butter, chopped
- 1/3 cup powdered sugar, sifted
- 1/4 cup sour cream
- Preheat oven to 350u0b0F. Grease and line a 2 1/2 inch-deep, 7x3 1/2 inch loaf pan with parchment paper, extending paper at long sides for handles.
- Beat butter, sugar and vanilla until light and creamy. Add eggs, 1 at a time, beating well after each addition. Fold in flour and 1/2 cup milk, in 2 batches.
- Split evenly between 3 bowls. Tint 1 portion pink with food coloring. Combine cocoa powder and remaining milk in a small bowl and stir into another portion. Leave remaining portion plain. Drop alternate spoonfuls of batter into prepared pan. Swirl with a skewer to create a marble effect. Smooth surface.
- Bake for 50 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the chocolate glaze, stir chocolate, butter, powdered sugar and sour cream in a small saucepan over low heat for 2-3 mins, or until smooth. Let cool slightly then chill for 1 hour, or until glaze thickens.
- Spread glaze over cooled loaf. Serve sprinkled with almonds.
