Pork Ribs With Chorizo And Smoked Paprika
- 4 cloves garlic, crushed
- 2 tsp smoked paprika
- 2 tbsp olive oil
- 3 1/3 lbs pork ribs, separated into individual ribs
- 7 oz chorizo, thinly sliced
- 1 medium red onion, coarsely chopped
- 1 medium red pepper, seeded and coarsely chopped
- 1 tbsp brown sugar
- 2 cans (14 oz each) diced tomatoes
- 1 cup chicken stock
- Preheat the oven to 325u0b0F. Combine garlic, paprika and half the olive oil in a small bowl; rub over ribs.
- Heat a large skillet on high heat. Cook chorizo, stirring, until lightly browned. Remove with a slotted spoon and place to one side of a foil-lined baking pan.
- Add ribs to the skillet and cook until well browned all over. Remove with tongs and place in the baking pan with the chorizo.
- Add remaining olive oil, onion and pepper to the skillet. Cook, stirring, until onion is soft. Return chorizo to the skillet. Add sugar, tomatoes and stock; bring to a boil. Spoon over the ribs. Cover tightly with foil.
- Bake for 1 hour. Remove foil. Bake for 30 mins, or until ribs are tender. Season to taste with salt and black pepper.
