Chicken, Avocado And Watercress Salad
- 2 None chicken breasts, pounded thin
- 1/4 tsp ground paprika
- 2 tsp canola oil
- 1 None avocado, peeled, pitted, sliced
- 2 tbsp lemon juice
- 1 None green apple, cored, sliced
- 2/3 cup plain yogurt
- 1 clove garlic, minced
- 5.25 oz watercress
- 1/2 cup chopped walnuts
- Coat chicken with paprika and season. Heat oil in a frying pan and saute chicken for about 3 mins per side, until cooked through. Set aside to cool. Shred.
- Meanwhile, toss avocado with 1 tbsp lemon juice and apple. Set aside.
- For the dressing, whisk together yogurt, remaining lemon juice and garlic. Season. Set aside.
- Arrange watercress, apple, avocado, chicken and walnuts on serving plates. Drizzle dressing over top and serve.
