Lemongrass, Ginger And Sesame Bars

  1. In a stand mixer, beat butter, sugar, spices and egg yolks until smooth. Stir in flour, lemongrass and candied ginger. Transfer to a floured work surface and knead until smooth. Roll dough out until 1/4 inch thick then chill for 30 mins.
  2. Preheat oven to 325u0b0F. Grease 2 baking trays and line with parchment paper.
  3. Cut dough into 16 (3 1/2 inch) squares then cut in each square in 1/2 to make 32 rectangles. Arrange about 2 inches apart on prepared trays and bake for 12 mins.
  4. Top each hot cookie with a sesame snap and bake for 3 mins. Let cool on trays.
