Lemongrass, Ginger And Sesame Bars
- 1/2 cup butter, softened
- 2/3 cup palm sugar, grated
- 1/2 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 1 pinch ground nutmeg
- 1 pinch ground cloves
- 2 None large egg yolks
- 1 2/3 cups all-purpose flour, sifted
- 4 inches fresh lemongrass, finely chopped
- 2 tbsp finely chopped candied ginger
- 32 None sesame crackers, trimmed to same size as cookies
- In a stand mixer, beat butter, sugar, spices and egg yolks until smooth. Stir in flour, lemongrass and candied ginger. Transfer to a floured work surface and knead until smooth. Roll dough out until 1/4 inch thick then chill for 30 mins.
- Preheat oven to 325u0b0F. Grease 2 baking trays and line with parchment paper.
- Cut dough into 16 (3 1/2 inch) squares then cut in each square in 1/2 to make 32 rectangles. Arrange about 2 inches apart on prepared trays and bake for 12 mins.
- Top each hot cookie with a sesame snap and bake for 3 mins. Let cool on trays.
