Walnut Granola Bars
- 7 oz walnuts, finely chopped
- 4 cups dry oatmeal
- 1/4 cup sugar
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1.75 oz chocolate chips
- 1.75 oz pumpkin seeds
- 1 oz coconut flakes
- 3.5 oz dried apricots, chopped
- 2/3 cup butter, softened
- 1/2 cup honey
- Mix together the walnuts, oats, sugar, flour, baking powder, cinnamon, chocolate chips, pumpkin seeds and coconut flakes. Puree the apricots in a food processor, then add the honey and butter and process to combine. Add the apricot and honey mixture to the dry ingredients and mix well.
- Preheat oven to 325u0b0F. Line a 6 x 9 inch jelly roll pan with parchment paper. Spoon the mixture onto the pan and smooth surface with the back of a metal tablespoon.
- Bake for about 25 minutes, until lightly browned and firm. Allow to cool for 10 minutes, then cut into 12 bars. Store in an airtight container.
