Boiled Apricot Nectar Cake
- 1 cup chopped dried apricots
- 1/2 cup chopped raisins
- 1/2 cup golden raisins
- 1/4 cup chopped dates
- 1/4 cup chopped glace cherries
- 1 cup apricot nectar
- 1 cup (2 sticks) butter
- 1 cup firmly packed brown sugar
- 5 None eggs
- 1 1/3 cups flour
- 1/3 cup self-rising flour
- 1/4 tsp baking soda
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- Combine the fruit with the apricot nectar in a medium saucepan. Bring to a boil. Reduce the heat to low; cover and simmer for 5 mins. Remove from the heat. Cover and let stand overnight.
- Preheat the oven to 300u0b0F. Line the bottom and side of a deep 9-inch round (or deep 8-inch square) baking pan with 3 layers of parchment paper.
- Beat butter and brown sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition.
- Stir in the fruit mixture until well combined. Stir in sifted dry ingredients. Spread the mixture into the prepared pan.
- Bake for about 2 1/2 hours. Cover with foil. Cool in the pan.
