Spicy Corn And Fish Fritters With Avocado Salsa
- 1 None avocado, pitted, peeled and diced
- 1 None tomato, finely chopped
- 1/2 None red onion, thinly sliced
- 1 tbsp lime juice
- 1 tbsp olive oil
- None None FOR THE FRITTERS
- 1/2 cup flour
- 2 tsp Cajun seasoning
- 2/3 cup milk
- 1 None egg, separated
- 8 oz boneless, skinless firm white fish fillet, chopped
- 3/4 cup canned corn kernels, drained
- None None Lime wedges, to serve
- For the fritters, sift flour and seasoning into a large bowl. Whisk milk and egg yolk in a medium bowl. Pour into flour, stirring to form thick batter. Season to taste.
- Stir in fish and corn. Whisk egg white in a small, clean bowl until soft peaks form. Gently fold egg white into batter.
- Heat oil in a large skillet on high heat. Drop heaped tablespoonfuls of mixture into pan in 2 batches. Cook for 2-3 mins each side, until cooked through and golden. Keep warm.
- For the salsa, toss all ingredients in a medium bowl. Season to taste. Serve warm fritters topped with salsa and accompany with lime wedges.
