Raspberry Yogurt Loaf

  1. Preheat oven to 350u0b0F. Grease a 5 x 9 inch loaf pan and line base and 2 long sides with parchment paper.
  2. Beat butter and sugar in a medium bowl until light and fluffy. Add eggs, one at a time, beating until just combined.
  3. Stir together flour, baking powder and salt. Add to butter mixture along with yogurt and raspberries. Spread batter into prepared pan. Bake for 1 hour, or until a skewer inserted in the center comes out clean. Let stand for 10 mins before turning on to a wire rack to cool.
  4. In a small bowl, beat the cream cheese, powdered sugar and lemon juice until smooth. Spread over the loaf.
