Baked Rigatoni And Meatballs
- 1 lb sausage meat
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 cup olive oil
- 1 None carrot, diced
- 1 stalk celery, diced
- 1 None red pepper, diced
- 1 (13.5 oz) jar pasta sauce
- 10.5 oz rigatoni pasta
- 2.5 oz mozzarella cheese, grated
- 1 oz Parmesan cheese, grated
- Preheat oven to 400u0b0F. Combine sausage meat, onion, garlic and oregano. Roll into small meatballs.
- Heat 2 tbsp oil in a large, nonstick frying pan. Working in batches, saute meatballs for 8 mins, until browned. Set aside. Heat remaining oil and saute carrot, celery and pepper for 5 mins, until golden. Add pasta sauce and 3/4 cup water. Return meatballs to pan. Season. Simmer, covered, for 10 mins.
- Meanwhile, cook rigatoni in boiling, salted water until al dente. Drain. Toss with meatball sauce then transfer to a large baking dish. Top with cheese. Bake for 30 mins, until golden brown and heated through. Serve hot.
