Pork Stir-Fry
- 1 1/2 lb ground pork
- 1/4 cup cilantro, ginger and sesame marinade
- 1 tbsp vegetable or peanut oil
- 6 oz rice vermicelli
- 1 None small red onion, finely chopped
- 1 None fresh long red chili, finely chopped
- 1/2 cup coarsely chopped fresh cilantro
- 1/4 cup finely chopped fresh mint
- 3 tsp lemon zest
- 1 tbsp lemon juice
- None None cucumber slices, to serve
- None None red radish slices, to serve
- None None tomato wedges, to serve
- None None lemon wedges, to serve
- None None lettuce leaves, to serve
- Combine ground pork and 1/2 the marinade in a large bowl. Reserve remaining marinade. Cover with plastic wrap and chill for 30 mins to marinate.
- Heat oil in a wok or large frying pan over medium-high heat. Stir-fry ground pork mixture, breaking up any lumps, for 3-4 mins, or until cooked through. Transfer to a large heatproof bowl. Add reserved marinade. Let cool slightly.
- Soak noodles in boiling water for 2-3 mins. Stir to separate strands then drain. Using kitchen scissors, cut noodles into short pieces.
- Add noodles, onion, chili, herbs, lemon zest and lemon juice to ground pork and mix to combine. Serve with cucumber, radish, tomato, lemon and lettuce.
