Vanilla Ice Cream In Honey Waffle Cones

  1. Preheat oven to 350u0b0F. Line 2 baking trays with parchment paper. Combine butter, sugar and honey in a small saucepan over low heat. Stir until sugar dissolves. Remove from heat. Add flour and cinnamon. Cool slightly.
  2. Shape mixture into balls, each using around 1 tbsp of mixture. Place on prepared trays about 4 inches apart. Using oiled fingers, flatten each ball into a 2 1/2 inch disc. Bake, in batches, for 8 mins, or until wafers are browned around edges. Let cool on tray for 1-2 mins.
  3. Working quickly, roll wafers into cone shapes. Place, seam-side down, on a wire rack to cool completely. Fill cones with ice cream and top with sprinkles.
