Moroccan Lamb With Couscous

  1. Combine lamb, spices and 1/4 cup yogurt in a medium bowl. Cover and refrigerate for 3 hours or overnight.
  2. Preheat grill and oil grates. Grill lamb until cooked to your liking. Cover and let rest for 5 mins. Slice thinly.
  3. Meanwhile, combine couscous and 1/2 cup boiling water in a large heatproof bowl. Cover and let stand for 5 mins, or until liquid is absorbed, fluffing with a fork occasionally. Stir in currants, lemon zest, lemon juice, fresh cilantro and lamb. Toss with a fork to combine.
  4. Serve lamb and couscous with remaining yogurt.
