Moroccan Lamb With Couscous
- 1 (1 lb) lamb tenderloin
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 cup plain yogurt
- 3.5 oz couscous
- 2 tbsp dried currants
- 2 tsp finely grated lemon zest
- 2 tsp lemon juice
- 1/4 cup fresh cilantro leaves
- Combine lamb, spices and 1/4 cup yogurt in a medium bowl. Cover and refrigerate for 3 hours or overnight.
- Preheat grill and oil grates. Grill lamb until cooked to your liking. Cover and let rest for 5 mins. Slice thinly.
- Meanwhile, combine couscous and 1/2 cup boiling water in a large heatproof bowl. Cover and let stand for 5 mins, or until liquid is absorbed, fluffing with a fork occasionally. Stir in currants, lemon zest, lemon juice, fresh cilantro and lamb. Toss with a fork to combine.
- Serve lamb and couscous with remaining yogurt.
