Oatmeal Applesauce Bread(Diabetic)
- 1 1/2 c. rolled oats
- 1/2 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1/4 c. all-bran cereal
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. unsweetened applesauce
- 1/3 c. vegetable oil
- 2 eggs
- 1 c. raisins
- 1/2 c. chopped nuts
- Mix oats, flour, all-bran, soda, baking powder, cinnamon and salt.
- Stir in applesauce, oil and eggs until blended.
- Stir in raisins and nuts until well mixed.
- Put into a lightly greased 9 x 5 x 3-inch loaf pan.
- Bake in preheated oven at 350u0b0 for 50 to 60 minutes.
- Cool in pan for 10 minutes, then turn out on rack to cool completely.
- Yields one loaf (18 slices, 1/2-inch thick).
