Stir-Fried Beef With Celery
- 1 lb beef sirloin steak, thinly sliced
- 1 tsp vinegar
- 2 tsp plus 1 tbsp soy sauce
- 1 None egg white, lightly beaten
- 3 tbsp oil
- 6 None green onions, trimmed and cut into 1-inch lengths
- 1 piece (3/4 inch) green ginger, finely chopped
- 6 sticks celery, diagonally sliced
- 2 tsp cornstarch
- 1 tbsp dry sherry
- 2 tsp oyster sauce
- 1 clove garlic, crushed
- Combine beef, vinegar, 2 tsp of the soy sauce and egg white in a large bowl.. Cover and refrigerate 1 hour, stirring occasionally.
- Heat 2 tbsp of the oil in wok or large skillet on high heat. Stir-fry the beef in batches until well browned. Remove from wok.
- Heat remaining oil in wok on high heat. Stir-fry celery, onions, ginger and garlic 1 min. Add beef and toss well.
- Combine cornstarch with 1/2 cup water, remaining 1 tbsp soy sauce, sherry and oyster sauce in small bowl. Add to wok; stir until boiling and well combined.
