Prawn Curry
- 6 1/2 tbsp butter
- 1 None onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp curry powder (or paste)
- 1/3 cup all-purpose flour
- 3 cups milk
- 1 1/2 lb cooked prawns, peeled and deveined
- 1 None tomato, chopped
- 1 None lemon, juiced
- 2 tsp chili sauce
- 2 tsp brown sugar
- None None steamed rice, to serve
- None None fresh cilantro sprigs, to serve
- None None papadums, to serve
- Melt butter over medium heat. Add onion, garlic and curry powder. Cook for 2-3 mins, until tender. Add flour. Cook, stirring, for 1 min. Gradually whisk in milk, until smooth. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Add prawns, chopped tomato, lemon juice, chili sauce and brown sugar. Gently heat for 2-3 mins.
- Serve with steamed rice, cilantro and papadums.
