Fish And Chorizo Soup
- 3 tbsp olive oil
- 1 None onion, peeled and diced
- 3 None chorizo sausages, sliced thickly
- 1 clove garlic, peeled and finely chopped
- 2 None medium red peppers, seeds removed, chopped
- 1 tsp Spanish paprika
- 2 None bay leaves
- 6 None fresh thyme sprigs
- 1 tbsp fresh oregano leaves
- 1 1/2 lbs unpeeled baby potatoes, halved
- 14 oz can tomatoes
- 6 cups chicken stock
- 2 lbs thick, boneless cod fillets, cut into large chunks
- Heat the oil in a saucepan. Add the onion and cook 5 mins. Add the chorizo, garlic and peppers and cook 2-3 mins. Add the paprika, herbs and potatoes, and stir to coat in the oil. Add the tomatoes and stock. Cover and simmer 15 mins. Add the fish and cook 4 mins, until just opaque. Season and ladle into bowls to serve.
