Okra Stew
- 2 large onions, chopped
- 1/4 c. butter or oil
- 1 lb. stew beef or lamb, cubed
- 2 tsp. salt
- 1 tsp. turmeric
- 1 lb. okra
- 2 medium potatoes, diced
- 4 medium tomatoes, quartered
- 2 c. water
- 1/4 c. lemon juice
- Saute onions in butter.
- Add meat, salt and turmeric and brown over medium heat 10 minutes.
- Cut off both ends of washed and dried okra and slice into 4 or 5 pieces.
- Place meat and onion mixture, okra, potatoes, tomatoes and water in a pot.
- Bring to a boil; reduce heat to medium-low, cover and simmer 30 to 40 minutes or until meat is tender (can be done quicker in pressure cooker; reduce water to 1 cup and cook 15 to 20 minutes or until meat is tender.)
- Add lemon juice.
- Simmer 5 minutes more.
- Serve over rice.
