Pea, Haloumi And Mint Penne
- 8.75 oz haloumi cheese, cut into bite-sized pieces
- 12 oz penne pasta
- 5.25 oz frozen or fresh peas
- 4 None spring onions, roughly chopped
- 2 tsp lemon juice
- 1/3 cup heavy cream
- 1 handful fresh mint leaves
- 2 oz Parmesan cheese, grated, a little reserved for garnish
- Preheat broiler. Broil haloumi for 5 mins, turning once. Keep warm.
- Cook pasta in boiling salted water until al dente. Drain, reserving 2 tbsp cooking water. Return pasta to saucepan.
- Meanwhile, cover peas and spring onions with boiling water. Let stand for 5 mins, or until tender. Drain.
- In a food processor or blender, combine 3/4 the pea and onion mixture with reserved cooking water, lemon juice, cream, 1/2 the mint and Parmesan. Puree until smooth. Season then toss with pasta. Fold in remaining mint and peas. Spoon between serving bowls and top with haloumi and reserved Parmesan.
