White Chocolate Napoleon
- 1 sheet frozen puff pastry, halved
- 7 oz white chocolate, melted
- 1 1/4 cups heavy cream
- 1 tbsp Cointreau (optional)
- 1/4 lb strawberries, hulled, sliced
- 1/4 lb blueberries
- None None fresh cherries and silver dragees, to serve
- Preheat oven to 400u0b0F. Line 2 baking trays with parchment paper.
- Place puff pastry on first tray. Bake for 15-20 mins, until puffed and golden. Turn upside down and press down gently to flatten slightly. Transfer to a wire rack to cool completely.
- Meanwhile, spread 1/2 the melted chocolate over the second tray. Allow to set at room temperature then cut out stars with cookie cutters. Carefully peel shapes away from parchment paper.
- In a large bowl, whip cream and Cointreau together to soft peaks. Place 1 rectangle of puff pastry onto a serving plate. Spread whipped cream over top. Arrange strawberries and 1/2 the blueberries over whipped cream then top with remaining rectangle of puff pastry. Pour remaining melted chocolate over puff pastry. Decorate with chocolate stars, cherries, remaining blueberries and silver dragees.
