Lemon And Garlic Lamb Rack
- 2 tbsp olive oil
- 3 (2 3/4 lb) lamb racks
- 1 1/4 lb baby new potatoes
- 2 None lemons, quartered
- 1 bulb garlic, unpeeled cloves separated
- 4 None zucchini, halved lengthwise
- 1 tbsp fresh lemon thyme leaves
- Preheat oven to 400u0b0F.
- Heat 1 tbsp oil in a large frying pan. Cook lamb, turning, for 5 mins, or until browned all over. Transfer to a roasting pan and season. Add potatoes, lemons and garlic to pan. Drizzle with remaining oil. Roast for 25 mins for medium-rare, or until cooked to your liking. Remove lamb from pan and let rest, covered, for 15 mins.
- Meanwhile, add zucchini to potatoes in pan and toss to combine. Increase oven to 500u0b0F and roast for 20 mins, or until tender and golden. Add thyme and toss to combine.
- Serve lamb with roasted vegetables and lemon quarters.
