Springerle Cookies
- 4 eggs
- 2 c. sugar
- 4 c. cake flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp. melted butter
- Using an electric mixer at low speed, beat eggs in a large bowl.
- Gradually stir in sugar, then beat at medium speed for 10 minutes.
- Sift together flour, baking powder and salt; blend into egg mixture alternately with butter, mixing well.
- Cover dough with waxed paper and chill 1 hour.
- Dust work surface lightly with flour and pat out half of the dough at a time to 1/2 inch thickness.
- Lightly dust springerle board or sprinkle rolling pin and press it firmly down on dough.
- Lightly grease baking sheet and sprinkle evenly with anise seed.
- Lift dough carefully to baking sheet and let stand overnight.
- Bake at 350u0b0 for 5 minutes, then reduce heat to 300u0b0 and continue baking for 10 minutes.
