Colourful Tomatoes Bavette With Zucchini And Thyme Breadcrumbs
- 14 oz pasta (eg spaghetti or tagliatelle)
- 2 None small zucchini, cut into thin strips with a vegetable peeler
- 3 tbsp olive oil
- 1/2 lb each of yellow and red cherry tomatoes
- 2 tbsp honey
- 3 tbsp breadcrumbs
- 3 stalks thyme, finely chopped
- 6 stalks basil
- Cook the pasta in boiling salted water according to the package directions. 1-2 mins before the end of the cooking time, add the strips of zucchini. Drain the pasta and zucchini in a colander.
- Heat 1 tbsp of oil in a frying pan heat and fry the tomatoes for 2-3 mins, turning from time to time. Pour in the honey, add the pasta and zucchini, season to taste and cook over a low heat. Heat 2 tbsp of olive oil in a small pan, and saute the breadcrumbs and thyme until golden. Serve the pasta, vegetables and breadcrumbs on 4 plates garnished with basil.
