Colourful Tomatoes Bavette With Zucchini And Thyme Breadcrumbs

  1. Cook the pasta in boiling salted water according to the package directions. 1-2 mins before the end of the cooking time, add the strips of zucchini. Drain the pasta and zucchini in a colander.
  2. Heat 1 tbsp of oil in a frying pan heat and fry the tomatoes for 2-3 mins, turning from time to time. Pour in the honey, add the pasta and zucchini, season to taste and cook over a low heat. Heat 2 tbsp of olive oil in a small pan, and saute the breadcrumbs and thyme until golden. Serve the pasta, vegetables and breadcrumbs on 4 plates garnished with basil.
