Meatballs With Couscous Salad
- 1 slice white bread, toasted, broken into chunks, soaked in cold water for 5 mins, squeezed dry
- 8.75 oz lean ground beef
- 1/2 None white onion, finely chopped
- 2 tbsp fresh cilantro leaves, chopped
- 1 None egg, lightly beaten
- 1 tbsp olive oil
- 15 oz couscous
- 10.5 oz cherry tomatoes, quartered
- 1 None cucumber, quartered lengthwise, sliced
- 1 None small red onion, halved, thinly sliced
- 2 tbsp lemon juice
- 1 tsp cumin seeds
- None None yogurt, to serve
- Combine breadcrumbs, ground beef, onion, 1 tbsp cilantro and egg. Season. Shape into 16 small meatballs.
- Lightly coat a large frying pan with oil. Cook meatballs over high heat for 5-7 mins, until browned and cooked through. Set aside.
- Bring olive oil and 2 cups water to a boil. Add couscous and cook over low heat until water is absorbed. Fluff with a fork to separate grains. Remove from heat. Toss with remaining ingredients, except yogurt. Serve with meatballs and yogurt.
