Baked Haddock With Brie
- 2 None carrots, peeled and cut into thin strips
- 1 None medium onion, peeled and cut into thin strips
- 4 sprigs fresh thyme, plus extra for garnish
- 1/4 cup dry white wine
- 4 None haddock fillets, lightly salted, rolled up and secured with toothpicks
- 1/2 None 8 oz package of brie, rind removed and diced
- 3/4 cup sour cream
- 20 None medium shrimp, uncooked, thawed, and peeled
- None None sliced baguette, to serve
- Preheat the oven to 400u0b0F. In a saucepan, bring the carrots, onion, thyme, wine, 1/2 cup water and a pinch of salt and white pepper to a boil. Add the haddock, cover and simmer over a medium heat for 6 mins.
- Remove the fish from the pan with a slotted spoon, then pour the stock through a sieve into a clean saucepan, reserving the vegetables. Add the brie and heat until melted. Stir in the sour cream and shrimp, then heat through. Season with salt and white pepper.
- Spoon the vegetables into individual casserole dishes and top with the haddock rolls. Cover with the shrimp sauce. Bake for 10-15 mins, until bubbling. Garnish with thyme and serve with baguette.
