Minted Pea Soup With Sour Cream
- 1 tbsp vegetable or olive oil
- 1 large white onion, finely chopped
- 2 cloves garlic, crushed
- 2 None vegetable bouillon cubes, crumbled
- 1 3/4 lbs frozen green peas
- 3/4 cup mint leaves, plus additional to garnish
- 1 tsp finely grated lemon peel
- 1/2 cup sour cream
- Heat the oil in a large saucepan on medium heat. Add onion and saute for 5 mins or until softened. Add garlic and saute for 1 min or until fragrant. Add the bouillon cubes and 3 cups water and bring to a boil. Add the peas. Reduce heat to low and simmer for 4 mins or until tender. Remove from heat; cool slightly.
- Add mint, lemon peel and 1/4 cup of the sour cream. Blend or process soup in a blender or food processor, in batches, until smooth, adding a little more water if too thick.
- Transfer soup to a bowl. Cover and refrigerate until soup is well chilled.
- Stir soup before serving. Divide among serving bowls. Serve topped with remaining 1/4 cup sour cream and additional mint leaves. Sprinkled with freshly cracked black pepper.
