Minted Pea Soup With Sour Cream

  1. Heat the oil in a large saucepan on medium heat. Add onion and saute for 5 mins or until softened. Add garlic and saute for 1 min or until fragrant. Add the bouillon cubes and 3 cups water and bring to a boil. Add the peas. Reduce heat to low and simmer for 4 mins or until tender. Remove from heat; cool slightly.
  2. Add mint, lemon peel and 1/4 cup of the sour cream. Blend or process soup in a blender or food processor, in batches, until smooth, adding a little more water if too thick.
  3. Transfer soup to a bowl. Cover and refrigerate until soup is well chilled.
  4. Stir soup before serving. Divide among serving bowls. Serve topped with remaining 1/4 cup sour cream and additional mint leaves. Sprinkled with freshly cracked black pepper.
