Warm Duck, Orange And Mushroom Salad
- 2 tbsp honey
- 1/4 cup orange juice
- 2 tbsp soy sauce
- 1 clove garlic, crushed
- 4 None duck breast fillets (about 1 1/3 lbs)
- 10 oz oyster mushrooms
- 7 oz button mushrooms, thickly sliced
- 10 oz shiitake mushrooms, halved
- 3 large oranges, segmented
- 4 oz lamb's lettuce leaves (mache)
- Preheat the oven to 350u0b0F.
- Combine the honey, orange juice, soy sauce and garlic in a small bowl. Score each piece of duck shallowly. brush each with about 1/4 cup of the honey mixture.
- Combine the mushrooms with the remaining honey mixture in a roasting pan. Place the duck on a wire rack over the pan. Roast, uncovered, for 10 mins.
- Remove the duck and wire rack from the pan. Drain the mushrooms, reserving about a third of the pan juices. Place the mushrooms in a large bowl.
- Replace the duck on the wire rack over the same pan. Brown under a preheated broiler until the skin crisps. Slice duck thickly.
- Add the orange, lettuce and reserved pan juices to the mushrooms and toss gently to combine. Divide the salad between 4 serving plates and top with duck slices.
