Thai Chicken And Lychee Salad
- 3 cups shredded cooked chicken
- 1 can (20 oz) lychees in syrup, drained and halved
- 1 small red onion, thinly sliced
- 8 None green onions, thinly sliced
- 2 cups bean sprouts
- 1/2 cup firmly packed fresh mint leaves
- 1/2 cup firmly packed fresh cilantro leaves
- None None FOR THE DRESSING
- 1 tsp finely grated lime peel
- 1 tsp sambal oelek (or other chili sauce)
- 1/4 cup lime juice
- 1 tsp sesame oil
- 1 tbsp brown sugar
- 2 tsp fish sauce
- For the dressing, whisk ingredients in a small bowl.
- Combine chicken, lychees, onions, bean sprouts, mint and cilantro in large bowl. Drizzle dressing over salad; toss gently to combine.
