Chopped Apple Spice Cake
- 3 c. chopped apples (not too fine)
- 1 c. chopped pecans
- 1 1/4 c. vegetable oil
- 2 eggs
- 2 c. sugar
- 2 1/2 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- whipped cream topping
- Combine oil, eggs and sugar; beat well.
- Set aside.
- Combine flour, baking soda, nutmeg, cinnamon, allspice, salt and baking powder.
- Sift again.
- Add dry ingredients to oil-egg-sugar mixture, beating well after each addition.
- Mixture will seem very stiff. Add vanilla extract.
- Fold in apples and pecans.
- Bake in greased 9 x 13-inch pan at 350u0b0 for 55 to 60 minutes.
- Serve with whipped cream topping.
