Orange And Hazelnut Cake With Orange Yogurt
- 4 None large eggs, at room temperature, separated
- 1/3 cup granulated sugar, 3 tsp reserved
- 3 tsp orange zest, 1 tsp reserved
- 1/2 cup orange juice
- 1 2/3 cups ground hazelnuts
- 3/4 cup self-rising flour
- 3/4 cup Greek yogurt
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease an 8 inch fluted ring pan with butter. Dust with flour to coat, shaking out excess.
- In a mixer, beat egg yolks with sugar and orange zest until thick and pale. Stir in orange juice, hazelnuts and flour until just combined. Whip egg whites to soft peaks then gently fold in. Transfer to prepared pan and bake for 25 mins, or until golden and a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
- Combine yogurt with reserved sugar and orange zest. Lightly dust cake with powdered sugar. Serve with orange yogurt.
