Sweet Potato Custard

  1. In a medium bowl, stir together sweet potatoes and banana. Add milk, blending well.
  2. Add brown sugar, egg yolks and salt, mixing thoroughly.
  3. Spray a 1-quart casserole with nonstick spray coating.
  4. Transfer sweet potato mixture to casserole.
  5. Combine raisins, sugar and cinnamon; sprinkle over top of sweet potato mixture.
  6. Bake in preheated 300u0b0 oven for 45 to 50 minutes or until a knife inserted near center comes out clean.
  7. Makes 6 servings, calories 144 and total fat 2 g.
