Chicken Pho

  1. Bring stock, ginger, cinnamon stick, fish sauce, soy sauce and 1 cup water to a boil over high heat, cover, reduce heat to low and simmer 5 mins. Discard cinnamon stick. Add chicken and lime juice and cook for 2 mins, or until chicken is cooked through.
  2. Divide noodles and chicken between 2 serving bowls. Ladle hot stock over noodles and serve topped with cilantro, sprouts, chili and onion.
