Avocado And Chorizo Crisps

  1. Preheat the oven to 350u0b0F.
  2. Cut each bread slice into 4 squares. Place on a baking pan and brush lightly with olive oil. Season to taste. Bake for about 10 mins until crispy.
  3. Heat 1 tbsp of oil in a medium skillet on high heat. Fry the chorizo for a few minutes until golden and slightly crispy on both sides. Remove to a plate. Season with salt, pepper and a squeeze of lime.
  4. For the avocado cream, blend the avocado, oil and lime juice until smooth. Season to taste. Spoon the mixture into a resealable bag; snip a small hole in the corner. Pipe onto the toast crisps.
  5. Top with the chorizo, a strip of pepper, a piece of feta and a sprig of cilantro
