Baked Potatoes Stuffed With Tuna

  1. Preheat oven to 400u0b0F. Lightly grease a baking tray.
  2. Boil or microwave potatoes for 8-10 mins, until tender. Cut off tops and carefully scoop out insides. Arrange potatoes on a baking tray.
  3. Meanwhile, melt butter in a large frying pan over high heat. Saute mushrooms and garlic for 2-3 mins, until tender. Add tuna and spinach. Stir until spinach wilts then transfer to a large bowl and let cool slightly. Once cool, mix in sour cream and cheese. Season to taste.
  4. Spoon mixture into potatoes and sprinkle with extra cheese. Bake for 5-10 mins, until golden brown. Serve sprinkled with chives.
