Hot Chocolate Prune Cake
- 1 1/4 cups pitted prunes
- 1 tsp baking soda
- 4 tbsp (1/2 stick) butter, chopped
- 3/4 cup firmly packed brown sugar
- 1 cup self-rising flour
- 2 None eggs
- 4 oz semi-sweet chocolate, chopped
- None None FOR THE HOT CHOCOLATE SAUCE
- 1 1/4 cups light cream
- 4 oz semi-sweet chocolate, chopped
- Preheat the oven to 350u0b0F. Generously grease a 8-inch ring cake pan.
- Combine prunes and 1 1/4 cups boiling water in food processor. Add baking soda; cover and let stand for 5 mins.
- Add butter and sugar to food processor; pulse until just combined. Add flour, then eggs; pulse until ingredients are just combined. Add chocolate; pulse until chocolate is just mixed into mixture (pieces of chocolate will still be visible). Pour into prepared pan.
- Bake for 1 hour, or until a skewer comes out clean. Cool in pan for 10 mins, then invert onto serving plate.
- For the chocolate sauce, combine cream and chocolate in small saucepan on low heat. Stir until chocolate is melted. Drizzle over cake to serve.
