Bacon Burgers With Avocado And Parmesan
- 6 slices bacon
- 14 oz ground beef
- 1 tbsp Dijon mustard
- Pinch None paprika
- 1 None egg yolk
- 3 None hamburger buns
- 3 tbsp low fat mayonnaise
- 1/2 None avocado, pitted, flesh removed and sliced
- 3 tbsp ketchup
- 1 small onion, peeled and sliced into rings
- 2 tbsp Parmesan shavings
- Heat a non-stick frying pan, add the bacon and cook for 3-4 mins, turning once, until crispy. Drain on paper towels and set aside.
- Place the beef in a large bowl with the mustard, paprika and egg yolk. Season with salt and freshly ground black pepper. Mix with a wooden spoon, then knead to combine. Shape into 3 burgers.
- Preheat the broiler to medium, place the burgers under the broiler for 10-14 mins, turning occasionally, until cooked through.
- Place the buns cut-side-up under the broiler, and toast briefly until golden.
- Fill the buns with the mayonnaise, avocado, burgers, ketchup, sliced onion, bacon and Parmesan shavings.
