Creamy Salmon Gnocchi

  1. Cook gnocchi in a saucepan of boiling, salted water following packet instructions. Drain well.
  2. Meanwhile, heat a large frying pan on medium. Brush salmon with a little oil and season to taste. Cook 2-3 minutes each side for medium, or until cooked to your liking. Transfer to a plate.
  3. Heat remaining oil in same pan on medium. Saute garlic 1 minute, taking care not to burn. Stir in sour cream, peas and lemon juice. Bring to a simmer.
  4. Add drained gnocchi to pan and toss well. Season to taste. Remove from heat. Stir basil and zest through.
  5. Divide among serving bowls and flake over salmon.
