Creamy Salmon Gnocchi
- 14 oz potato gnocchi
- 1 lb salmon fillet, skinless,
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 1/2 cup sour cream
- 1/2 cup frozen peas
- 1 None lemon, 2 tbsp juice, 1 tbsp zest
- None None basil, chopped
- Cook gnocchi in a saucepan of boiling, salted water following packet instructions. Drain well.
- Meanwhile, heat a large frying pan on medium. Brush salmon with a little oil and season to taste. Cook 2-3 minutes each side for medium, or until cooked to your liking. Transfer to a plate.
- Heat remaining oil in same pan on medium. Saute garlic 1 minute, taking care not to burn. Stir in sour cream, peas and lemon juice. Bring to a simmer.
- Add drained gnocchi to pan and toss well. Season to taste. Remove from heat. Stir basil and zest through.
- Divide among serving bowls and flake over salmon.
