Hoisin Duck With Asian Greens
- 1 tbsp peanut oil
- 1 None Chinese barbecued duck (about 2 lbs), bones discarded, meat thickly sliced, skin coarsely chopped
- 2 cloves garlic, thinly sliced
- 1 piece (3/4 inch) ginger, peeled and grated
- 1 None fresh long red chili pepper, thinly sliced
- 12 oz gai lan (Chinese broccoli) or bok choy, coarsely chopped
- 1 tbsp hoisin sauce
- 2 tsp reduced sodium soy sauce
- 4 None green onions, coarsely chopped
- Heat 1 tsp of the oil in a wok on high heat. Stir-fry duck skin until crisp. Drain on paper towel.
- Heat remaining oil in wok. Stir-fry garlic, ginger and chili pepper until fragrant. Add gai lan (or bok choy), sauces, half the green onion and 1 tbsp water; stir-fry until gai lan has wilted. Add duck meat and skin and remaining green onion; stir-fry until heated through.
