Lemon And Herb Turkey Breast
- 1/4 c. lemon juice, lime juice or sherry
- 2 Tbsp. olive oil
- 1 tsp. finely chopped garlic
- 1 tsp. Dijon mustard
- 1 tsp. dried sage
- 1/2 tsp. dried marjoram
- 1/2 tsp. salt
- 1 tsp. pepper
- 1 boneless turkey breast half (about 2 lb.)
- Combine juice, oil, garlic, mustard, herbs, salt and pepper in gallon size plastic food bag.
- Refrigerate for 24 hours.
- Fold piece of heavy aluminum foil in half (dull side out) to form an 18-inch square.
- Place turkey in middle of square and drizzle with marinade.
- Fold foil over to seal tightly.
- Prepare medium hot coals.
- Grill packet 5 to 6-inches over coals for 25 minutes. Remove from grill.
- Remove turkey from packet, reserving juices. Grill, basting with reserved juices and turning over, for 20 to 30 minutes longer or until cooked through.
- Makes 8 servings.
