Spicy Sausage And Bean Casserole
- 1 tbsp oil
- 1 lb pork sausages
- 2 None onions, peeled, chopped
- 1 None red chili, seeded, chopped
- 4 None tomatoes, cut into wedges
- 1 (15 oz) can cannellini beans, drained, rinsed
- 2 1/2 cups tomato puree
- 1 tbsp mild chili powder
- 1 tsp ground cumin
- None None sour cream, to serve
- None None fresh cilantro leaves, chopped, to garnish
- Preheat oven to 375u0b0F.
- Heat oil in a Dutch oven. Saute sausages for 6-7 mins, until browned. Add onions and chili. Cook for 5 mins, until softened. Add tomatoes, beans, tomato puree, chili powder and cumin. Bring to a boil and season. Transfer to oven and bake for 30 mins.
- Serve with spoonfuls of sour cream. Garnish with fresh cilantro.
