Silver Dollar Pancakes
- 1 1/4 cups self-rising flour
- 1/2 cup sugar
- 1/2 cup buttermilk
- 1 large egg
- 1 None pear, cored, peeled, grated, plus 2 pears thinly sliced
- 2 tbsp butter, plus more, melted to cook pancakes
- 2 tbsp honey, plus more to drizzle
- None None Plain yogurt to serve
- Sift flour into a large bowl. Stir in sugar and make a well in the center. Gradually whisk in combined buttermilk, egg and grated pear until smooth.
- Melt butter in a large skillet over medium heat. Stir in honey and bring to simmer. Add half sliced pear and cook 3-4 minutes each side, until caramelized lightly.
- Brush a large hot skillet with a little melted butter. Working in batches; drop 2 tablespoonfuls of mixture into pan per pancake. Cook 3-4 minutes until bubbles appear on the surface and the underside is golden. Turn and cook for a further 1-2 minutes until puffed and cooked through.
- Serve pancakes layered with caramelized pears, topped with crisp raw pear slices, yogurt, and a drizzle of honey.
