Silver Dollar Pancakes

  1. Sift flour into a large bowl. Stir in sugar and make a well in the center. Gradually whisk in combined buttermilk, egg and grated pear until smooth.
  2. Melt butter in a large skillet over medium heat. Stir in honey and bring to simmer. Add half sliced pear and cook 3-4 minutes each side, until caramelized lightly.
  3. Brush a large hot skillet with a little melted butter. Working in batches; drop 2 tablespoonfuls of mixture into pan per pancake. Cook 3-4 minutes until bubbles appear on the surface and the underside is golden. Turn and cook for a further 1-2 minutes until puffed and cooked through.
  4. Serve pancakes layered with caramelized pears, topped with crisp raw pear slices, yogurt, and a drizzle of honey.
