Sautéed Broccolini
- 1 lb broccoli rabe, trimmed, tough stems discarded
- 3 tbsp olive oil
- 1/2 tsp minced garlic
- 1/4 cup chicken stock
- 1/4 cup sliced orange bell peppers
- 1/4 cup sliced yellow bell peppers
- 1/2 cup diced red onion
- 1/2 cup sliced baby portobello mushrooms
- Blanch broccoli rabe in boiling salted water for 2 mins, until tender. Shock in ice water then drain.
- In a large frying pan, heat 2 tbsp olive oil over medium heat. Cook garlic for 30 seconds. Add chicken stock and broccoli rabe. Cook for 3 mins, or until broth evaporates. Season then transfer to a serving platter.
- Meanwhile, in a separate frying pan, heat remaining olive oil. Cook peppers, onion and mushrooms for 2 mins. Arrange over broccoli on serving platter.
